It's Wednesday again, which means it's time for another delicious recipe!

Fall is upon us, and with it comes the tantalizing scent of pumpkin treats filling our homes and coffee shops. But let's face it, as much as we all love these pumpkin-spiced treats, many of them are loaded with sugar. This generally makes most people trying to be healthy think twice before indulging.

Fear not, pumpkin enthusiasts! We're about to introduce you to a delightful pumpkin treat that won't make you feel guilty. Say hello to our Amazing Pumpkin Muffins! These little beauties are no ordinary muffins. They're gluten-free, dairy-free, and what's even better, they're significantly lower in sugar than most pumpkin desserts out there.

A Healthier Twist to the Seasonal Treats

It's a common misconception that for a treat to be delicious, it has to be loaded with sugar. Our recipe defies that notion. With just a quarter cup of maple syrup, these muffins achieve the perfect balance of natural sweetness that's neither overpowering nor subtle. It's just right, making them an excellent choice for those who want a treat but don't want to go overboard with sugar.

Gluten and Dairy-Free? Yes, Please!

If you are sensitive to gluten or dairy, you shouldn't have to miss out on the joys of seasonal treats. Our Amazing Pumpkin Muffins meet these dietary needs without sacrificing the texture and flavor that make muffins so beloved. Whether you use sorghum and buckwheat flours or opt for a 1:1 gluten-free flour blend, these muffins promise to be tender and oh-so-delicious.

Plant-based vanilla protein powder not only enhances the flavor profile but also boosts the protein content, making them a satisfying snack or breakfast treat.

Garnish to Impress

For an added touch of crunch and aesthetics, sprinkle pumpkin seeds on top before baking. Not only do they look great, they're a nutritional powerhouse, packed with zinc, magnesium, and omega-3 fatty acids.

Like a sweeter treat?

No problem! Gently fold in ⅓ cup golden raisins, or ⅓ cup dairy-free chocolate chips to your batter before baking. 

Storage Tips:

  • Store in the refrigerator in an airtight container for up to one week.

  • For longer storage, freeze muffins by placing in a single layer on a baking sheet, and freeze until solid. Then, transfer them to a freezer-safe container or bag and freeze for up to 2-3 months. Thaw overnight in the refrigerator and reheat in the oven until warmed through.

  • The pumpkin seeds on the muffins may soften over time. For a crunchy top, reheat in the oven at 350°F for a few minutes, monitoring closely to avoid over-baking.

Amazing Pumpkin Muffins

Indulge in a healthier version of your favorite fall treat! These gluten-free, dairy-free, protein-packed pumpkin muffins will delight your taste buds and nourish your body. They are tender, full of seasonal spices, and naturally sweetened.

Yield: 12 standard size muffins

Ingredients:

  • 1 15 oz can Organic Pumpkin Puree (not pumpkin pie filling)

  • 2 eggs

  • ⅓ cup creamy almond butter

  • ¼ cup maple syrup

  • 1 tsp apple cider vinegar

  • 1 tsp vanilla extract

  • ¾ cup sorghum flour

  • ¼ cup buckwheat flour 

(Alternatively, instead of the sorghum and buckwheat flours, you can use 1 cup 1:1 gluten free flour blend instead)

  • ⅓ cup plant based vanilla protein powder

  • 1 ½ tsp pumpkin pie spice

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ⅛ tsp sea salt

  • ⅓ cup pumpkin seeds for garnish (optional but recommended)

  • ⅓ cup golden raisins or ⅓ cup chocolate chips (optional for a sweeter muffin)

Instructions:

  1. Preheat the oven to 375°F

  2. Line a standard size muffin tin with parchment liners.

  3. In a large mixing bowl, whisk together the pumpkin puree, eggs, almond butter, maple syrup, apple cider vinegar and vanilla extract. Mix until well combined and smooth.

  4. To the pumpkin mixture, add the flours, protein powder, pumpkin pie spice, baking powder, baking soda and sea salt. Mix well, until all the dry ingredients are incorporated and the batter is smooth.

  5. If you're adding in the raisins or chocolate chips for a sweeter muffin, gently fold them into the batter.

  6. Evenly distribute into the prepared muffin tin. Top with pumpkin seeds if desired.

  7. Bake in the preheated oven for about 24 minutes, or until the muffins have risen and are golden brown. 

  8. Let cool in the tin for about 10-15 minutes, or until handleable, then place on a cooling rack.

  9. Enjoy!
