When the heat is on, there's nothing like a light and refreshing salad to keep you feeling nourished and hydrated. Today, I'm excited to share a simple and delicious recipe that has been my favorite all week: the Cooling Summer Tomato, Cucumber, and Avocado Salad.
A celebration of fresh summer produce, this salad combines juicy garden or heirloom tomatoes, crisp English cucumbers, and creamy avocados. Tossed in a light dressing of rice vinegar, olive oil, and a pinch of salt, it's both flavorful and invigorating. The best part? It doesn't require a stove or oven, it's quick to make, and it keeps your kitchen cool and your prep time short.

Cooling Summer Tomato, Cucumber, and Avocado Salad
A light, refreshing, and nutritious salad perfect for hot summer days.

Yield: 4 servings
Ingredients:
1 pound garden or heirloom tomatoes, diced (about 6 medium small tomatoes)
1 English cucumber, diced (peeling is optional)
1 avocado, diced
2 tablespoons rice vinegar
1 tablespoon olive oil
1/4 teaspoon salt (or to taste)
fresh ground black pepper (optional)
Instructions:
In a large bowl, add the diced tomatoes, cucumber, and avocado.
Add the rice vinegar, olive oil, and sea salt. Gently stir to combine.
Divide the salad between 4 bowls, and top with fresh ground pepper if desired.
Enjoy promptly! This salad is best when served fresh. Leftovers may not keep so well.
