In the midst of our busy schedules, making sure each meal is healthy, delicious, and quick to prepare can sometimes seem like a tall order. It's common to feel overwhelmed with the daily demands of meal planning and prep, so today we have an easy, simple recipe for you!
This Burger Bowl is a snap to put on the table, easy to prepare, and super delicious! Best of all, it's customizable, using your favorite patty. Whether that be a black bean burger, salmon burger, turkey burger or beyond, this recipe offers a balance of protein, veggies, healthy fats, and carbs, making it an ideal choice for a satisfying and enjoyable dinner.
Whether you're in a hurry to get dinner on the table, or you're planning your meals for the week, this bowl has got you covered.
The Ultimate Any-Burger Bowl
Mix and match your favorite patties with fresh, wholesome ingredients, for a quick and nutritious meal, anytime!

Servings: 4 dinner size portions
Ingredients
1 large sweet potato, peeled cut into wedges
2 large red potatoes, scrubbed clean and cut into wedges (no need to peel)
2 bell peppers, de-seeded and sliced into larger slabs
4 burger patties (choose from veggie, fish, tofu, turkey or your favorite)
2 medium tomatoes, sliced
4 small dill pickles, sliced
4 cups pre-washed, mixed salad greens
Olive oil, for roasting
Salt and pepper, to taste
Optional toppings: ketchup, mustard, garlic aioli, chipotle aioli, avocado slices, or balsamic vinaigrette
Instructions
Preheat the oven to 400°F (200°C). Line two large sheet pans with parchment paper.
Cut your sweet potato, potato, and bell pepper.
Place the sliced sweet potato and red potato on one of the prepared sheet pans. Toss with 1 Tbsp olive oil, and a little salt, and pepper. Arrange in a single layer so no pieces are touching. Set aside.
On the next prepared sheet pan place the sliced bell peppers, and toss with 1 ½ tsp olive oil. Rub the oil in really well, season with a pinch of salt and pepper, and place skin side down. If baking your burgers, place them on the sheet pan with the peppers.
Place the both sheet pans in the oven and roast for about 30 minutes, stirring halfway through. If you are pan-frying your burgers, do so while your veggies are roasting.
Slice your tomato and pickle.
Roast the potatoes and peppers until tender and lightly browned, and your burgers are done, about 30-35 minutes. Make sure to cook your burgers of choice thoroughly, or according to your preferred method, or package instructions. When your veggies and burgers are done, remove both sheet pans from the oven.
Divide the salad greens among four bowls. Top each bowl with roasted sweet potatoes, red potatoes, bell peppers, a cooked burger patty, tomato slices, and pickles.
Add toppings of your choice, and serve.
