Have you tried Chocolate Covered Almond Butter Stuffed Dates yet? If not, you’re in for a real treat! They are sweet, caramel-like, and coated in smooth dark chocolate. The texture is incredible! The dates are soft and chewy, the almond butter is rich and creamy, and the chocolate has a nice little crunch at first, and then melts perfectly with every bite. They feel indulgent, but they are made with simple, nourishing ingredients that satisfy your sweet tooth without any added sugar. 

Medjool dates are one of my favorite treats. They are super delicious and also come with some amazing nutritional benefits! They are naturally rich in fiber, iron, potassium, magnesium, vitamin B6, and antioxidants. 

These Chocolate Covered Almond Butter Stuffed Dates take just a few minutes to make, require no baking, and store well in the fridge or freezer. Whether you need a quick snack, a little dessert, or a treat to share, these are sure to impress!

Chocolate Covered Almond Butter Stuffed Dates

This simple, no-bake treat is naturally sweet, satisfying, and made with wholesome ingredients you can feel good about!

Yield: 12 stuffed dates

Ingredients:

12 Medjool dates (pitted)

4 tablespoons almond butter (about 1 teaspoon per date)

1/2 cup dark chocolate chips (dairy-free if needed)

1 teaspoon coconut oil (or avocado oil)

Optional toppings: crushed nuts, large flake sea salt, or shredded coconut

Instructions:

  1. Line a small cookie sheet with parchment paper and set aside.

  2. Slice each date lengthwise without cutting all the way through and remove the pit. Fill each date with 1 teaspoon of almond butter and gently press the sides together. 

  3. Melt the chocolate chips and coconut oil in the microwave, stirring every 20 seconds until smooth. Dip each stuffed date into the melted chocolate, letting the excess drip off. A fork works great for this! Place on the parchment lined cookie sheet. 

  4. Sprinkle with large flaked sea salt, crushed nuts, or shredded coconut if desired. Refrigerate for 20 minutes until set. Enjoy right away or store in an airtight container in the fridge for up to a week.
