As we embrace the warmer days of summer, there's nothing better than starting the morning with a fresh and delicious breakfast that's nutritious, satisfying, and ready to go! Sometimes I want something that feels like a treat, but doesn't compromise my health goals. Today, I'm excited to share a new recipe that's perfect for just that! Great for a busy morning, healthy snack, or a fun pre-workout breakfast: Chocolate Strawberry Overnight Oats. This easy to prepare breakfast is packed with protein, bursting with vibrant flavors, and will make your mornings exciting!

The Chocolate: Dark chocolate is loaded with antioxidants that fight inflammation. It supports heart health, improves blood flow, boosts brain function, and lifts your mood! Still not into it? Don't worry, these oats are customizable. If you're limiting your fats, don't like chocolate, or feel that it may be too indulgent, feel free to leave it out.

Chocolate Strawberry Overnight Oats

Yield: 2, 12 oz jars for 2 servings, or you can split it into 4 jars for 4 smaller servings

Ingredients:

For the Overnight Oats:

  • 2/3 cup rolled oats

  • 2 teaspoons chia seeds

  • 2 teaspoons flax meal

  • 2 teaspoons hemp seeds

  • 1 scoop (22g) chocolate protein powder (11g, or 1/2 scoop each jar)

  • 1/2 cup almond milk (or any plant based milk)

  • 1/2 cup unsweetened plain, dairy free yogurt

  • 1/2 teaspoon vanilla extract

  • 1/2 cup fresh strawberries, chopped

For the Topping (optional but recommended):

  • 1 tablespoon dark chocolate chips, dairy free 

  • 1/2 teaspoon coconut oil

  •  Cocoa powder (optional)

  • Sliced almonds, almond butter, coconut, or cacao nibs (optional)

  • Extra fresh strawberries, sliced (optional)

Instructions:

  1. In a medium bowl, mix together the oats, chia seeds, flax meal, hemp seeds, and chocolate protein powder. In a separate bowl, mix together the almond milk, dairy free yogurt, and vanilla extract. Combine the wet ingredients with the dry, stirring really well so there's no dry spots. Gently fold in the chopped strawberries.

  2. Divide the mixture evenly between two jars or airtight containers. If making the topping, continue below. If not, refrigerate your overnight oats and enjoy within a few days.

If Making the Topping:

  1. Melt the dark chocolate chips and coconut oil in the microwave, stirring every 10 seconds until smooth, creamy and completely melted.

  2. Pour the chocolate topping evenly over each overnight oats jar, and gently tilt from side to side to cover the entire surface. Refrigerate for about 10 minutes uncovered, until set.  Remove from the refrigerator and lightly dust with cocoa powder. Add the optional toppings, if desired.

  3. Place the lids on and refrigerate overnight.

  4. In the morning, gently crack the hardened chocolate shell with a spoon, (yay, so fun!) give the oats a good stir, and enjoy your nutritious, delicious breakfast!

  5. Enjoy!

Nutritional Information:

Total Macros per Serving for 1 12 oz jar: 1 fat, 1 carb, 3/4 protein

Approximately:  231 calories, 22g carbs, 10 g fat, and 13g of protein
