This Dairy-Free Classic Tomato Soup brings all the nostalgia of the traditional version, with a modern twist that keeps it light yet richly flavored. Made without dairy, this soup offers that creamy, cozy texture in a way that’s gentle on the stomach and just as delicious.

Using fire-roasted tomatoes, garlic, and a blend of herbs, this recipe packs in layers of flavor while keeping things simple and healthy. Dairy-Free Classic Tomato Soup

Cozy, comfort and a hug in a bowl - the classic, most delicious tomato soup!

Yield: 4 large bowls

Ingredients:

  • 2 tbsp olive oil

  • 1 small yellow onion, diced

  • 1 tbsp minced garlic (about 4 medium cloves)

  • 1 tbsp Mediterranean seasoning (or 1 tbsp Italian seasoning)

  • 1 tsp ground coriander

  • 1 (28 oz) can Muir Glen diced fire-roasted tomatoes (these are truly the best!)

  • 1 (6 oz) can tomato paste

  • 1 tbsp honey

  • 1 ½ - 2 cups vegetable broth (depending on desired thickness)

  • ½ - 1 tsp sea salt

Fresh ground black pepper to taste

Optional:

1 14oz can white beans, drained and rinsed (cannellini, navy or mayocoba all work well)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.

  2. Add the Mediterranean or Italian seasoning and ground coriander, and stir to combine.

  3. Pour in the fire-roasted diced tomatoes, tomato paste, and honey, and give a good stir. 

  4. Add the vegetable broth, starting with 1 ½ cups. If the mixture seems too thick add more broth, ½ cup at a time, until your desired consistency is reached. 

  5. Bring the soup to a gentle simmer, cover, and cook for about 20 minutes. If you’re adding beans, stir them in after the initial simmer and let them warm through for an additional 1-2 minutes. Season with salt and pepper. Taste and adjust seasonings as necessary.

  6. Ladle into four bowls. Enjoy!

This soup will keep well in an airtight container in the refrigerator for up to one week.
