As the festive aftermath of Thanksgiving settles down, it's a wonderful time to refocus on our health and wellness goals. That's why we're excited to share a recipe that's perfect for those chilly mornings and a great step toward staying healthy before the next holiday season: our Quinoa Breakfast Bowl.
What makes this bowl amazing?
Quinoa:
Quinoa isn't just a trendy grain-it's a nutritional powerhouse. It's unique among grains because it contains all nine essential amino acids, making it a complete protein source. This is especially beneficial for vegetarian and vegan diets. Per cup of cooked quinoa, you can expect about 8 grams of protein, which is higher than most other grains. Its versatility and mild flavor make it an ideal base for a variety of toppings.
Pomegranate Seeds:
Pomegranate seeds are full of antioxidants, which help protect the body from inflammation and free radical damage. They are also a great source of vitamin C, and just so pretty!
Convenience and Simplicity:
This breakfast bowl is packed with health benefits and easy to prepare, making it an ideal choice for those busy mornings. The best part? It's can be made ahead of time! Just cook the quinoa and store it in the fridge. In the morning, reheat it, add your fresh fruit, nuts, and a splash of almond milk for a quick, nutritious start to your day.

This bowl can be easily customized to suit different tastes or dietary needs. It can be made sweeter, nuttier, or even more fruity, depending on your preference.

Quinoa Breakfast Bowl

Servings: 2
Ingredients:
½ cup quinoa, rinsed
1 cup water
½ medium banana, sliced, divided
¼ cup pomegranate seeds, divided
¼ cup raspberries, divided
2 Tbsp pecans, chopped, divided
2 tablespoons flaked coconut, divided
1 cup almond milk (divided into ½ cup each bowl)
Dash of cinnamo
Instructions:
Cook the Quinoa: In a medium saucepan, combine the quinoa and water. Bring to a boil over high heat, then reduce the heat to low and cover. Simmer for 15 minutes, or until the quinoa is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
Warm the Almond Milk: While the quinoa is cooking, gently warm the almond milk in a small saucepan over low heat. Be careful not to boil it - you just want it warm.
Assemble the Bowls: Divide the cooked quinoa evenly between two bowls. Top each bowl with half of the sliced banana, pomegranate seeds, raspberries, and pecans. Sprinkle with flaked coconut.
Serve: Pour the warmed almond milk over the top of each bowl just before serving, and sprinkle with a dash of cinnamon.
