Autumn is coloring the world with its vibrant hues, and the air is becoming refreshingly crisp, making it an ideal time to discover recipes that are nutritious and bursting with flavor. Today, we're excited to share a tangy and savory recipe that combines harmonious flavors- our Sun-dried Tomato Hummus! Whether served as a savory dip for crunchy veggies, a zesty spread for wraps, or simply a nutritious snack, this hummus is sure to satisfy!

What Makes This Hummus Special?

Chickpeas:

Chickpeas provide an excellent source of plant-based protein, and are rich in dietary fiber. High fiber foods aid in digestion and promote a healthy gut. Due to their high fiber content, chickpeas can satisfy hunger for longer periods. Win, win!

Sun-dried Tomatoes:

The sun-dried tomatoes add a creative twist, providing a concentrated, tangy sweetness that elevates the hummus to a whole new level of deliciousness. They are not just about the flavor- they are also packed with vitamins, minerals, and antioxidants, contributing to overall health.

Gluten-Free and Dairy-Free:

This hummus is a delightful option for those avoiding gluten and dairy. It’s creamy, rich, and full of flavor, ensuring that everyone, regardless of dietary restrictions, can enjoy it without compromise.

Serve as a Main Dish, Lunch, Breakfast, or Snack:

The versatility of this hummus is remarkable! It can be the star of your meal, served with quinoa and mixed veggies for a main dish, or eaten for lunch in a wrap or sandwich. Try it for breakfast with avocado toast. It works great for a side or snack too! Simply serve with roasted broccoli or cauliflower, sliced raw veggies, or crackers. 

Storage Tips:

  • Store the hummus in an airtight container in the refrigerator. It will stay fresh and tasty for up to a week.

  • Did you know hummus can be frozen? Freeze hummus easily for up to 6 months in an airtight container, allowing a bit of space for expansion. When you're ready to enjoy it, simply thaw overnight in the fridge. Give it a good stir, and possibly add a dash of olive oil or water to help perk it up before eating.

Sun-dried Tomato Hummus

Elevate your afternoon with this irresistibly flavorful and creamy hummus. It makes a perfect companion to sliced veggies, healthy crackers, a wrap or sandwich!

Yield: Approximately 2.5 cups

Ingredients:

1 can chickpeas (drained and rinsed)

2 cloves garlic, minced

¼ cup sesame tahini paste

¼ cup sun-dried tomatoes, packed in olive oil (take them out of the jar with a fork to avoid excess oil) plus 1 Tbsp more for garnish

½ lemon, juiced

1 tsp dried basil

1 tsp sea salt

½ tsp smoked paprika

½ tsp onion powder

½ tsp garlic powder

½ tsp cumin

¼ cup water, divided

2 Tbsp marinated artichoke heart brine, or 2 Tbsp olive oil

¼ cup marinated artichoke hearts, chopped (optional)

Instructions:

  1. In the bowl of a food processor fitted with an “S” blade, add the drained and rinsed chickpeas, minced garlic, tahini, sun-dried tomatoes, lemon juice, spices, and 2 Tbsp of the water.

  2. Blend until smooth. Add the marinated artichoke heart brine, or the olive oil, and process until very smooth. If the mixture seems too thick, add in the extra 2 tbsp of water and process until you reach your desired consistency. 

  3. Pulse in the chopped artichoke hearts if using. Place the hummus in a bowl and top with the 1 Tbsp of reserved sun-dried tomatoes. Serve with sliced veggies and crackers for a side dish, or refrigerate for use all week!

  4. Enjoy!
