Black Bean Tortilla Soup
A culinary hug in a bowl, perfect for those busy school nights or after a long day at work. This soup brings warmth and nourishment to the table, promising a full-flavored and satisfying experience.

Yield: 4 Large Bowls
Ingredients:
1 medium yellow onion, diced
2 celery stalks, diced
1 large carrot, diced
3 cloves garlic, minced
1 Tbsp olive oil
½ tsp salt
1 can mild green chilis (4 oz), or 1 green bell pepper if sensitive to spice
1 can tomato paste (6oz)
1 can Muir Glen petite diced tomatoes, fire roasted with chipotle peppers (14.5 oz), or regular diced tomatoes (if spice sensitive)
1 can black beans (15.5 oz), (or 1½ cups cooked black beans)
1 can super sweet corn (15 oz), or 1¾ cups frozen corn)
2 ½ cups broth (vegetable, chicken, or bone broth all work well)
1 Tbsp cumin
2 tsp smoked paprika
1 tsp oregano
½ tsp onion granules
½ tsp black pepper
½ tsp coriander
¼ tsp garlic granules
½ lime, juiced
⅓ cup chopped cilantro
Sea salt and pepper to taste
Optional toppings:
Dairy free yogurt or cashew cream, tortilla chips, radish, cilantro, tomatoes
Instructions
Dice the onion, celery and carrot. Mince the garlic.
In a large soup pot, heat 1 tbsp of olive oil over medium heat until shimmering. Add the diced onion, celery and carrot, and sauté, stirring occasionally for about 5 minutes, until the onion becomes translucent.
Add the minced garlic and salt, and stir. Cook until fragrant, about 30 seconds.
Add the green chilis, tomato paste, diced tomatoes, black beans, corn, broth and stir until well blended and no tomato paste chunks remain. Add the cumin, smoked paprika, oregano, onion granules, pepper, coriander and garlic granules, and stir well.
Bring to a boil over high heat, stirring constantly.
Turn the heat down to low, cover with a lid, and simmer for about 30 minutes, stirring occasionally to ensure the soup is not sticking to the bottom.
After the soup has simmered for 30 minutes, turn off the heat and add the juice of ½ a lime and the chopped cilantro. Stir well. Carefully taste the soup and add more salt and pepper if desired.
Ladle the soup into 4 large bowls, and garnish with your desired toppings.
