Cozy Apple Strawberry Crisp for Two

A comforting blend of tender, spiced apples and juicy strawberries topped with a crunchy oat, cashew, and date crumble. This wholesome dessert is bursting with flavor and easy to make!

Yield: 2 servings

Ingredients:

For the fruit crisp:

  • 1 large apple, peeled, cored and sliced

  • 3/4 cup frozen strawberries, quartered

  • 1/2 tsp cornstarch or arrowroot

  • 1/2 tsp ground cinnamon

  • 1/8 tsp ground nutmeg

For the topping:

  • 2 large medjool dates (pitted and chopped)

  • 1/4 cup raw cashews

  • 1/4 cup rolled oats

  • 1 tbsp coconut oil or vegan butter

Instructions:

  1. Preheat the oven to 350°F (175°C). 

  2. In a medium bowl, toss the sliced apples and strawberries with the cornstarch, cinnamon, and nutmeg until well coated. Divide the fruit mixture between two small 8oz ramekins.

  3. In a food processor, blend the dates and cashews until finely chopped. Add the oats and blend again until combined and crumbly. Add the coconut oil, or vegan butter, and pulse until the mixture resembles a crumbly cookie dough, and sticks together when pressed.

  4. Crumble the topping all over the fruit mixture, pressing it down gently.

  5. Cover the ramekins with parchment paper or foil, and bake for 1 hour, uncovering for the last 5 minutes to allow the topping to become golden.

  6. Let it cool for a few minutes before serving. Enjoy warm!
