By allowing ourselves the occasional treat, we can indulge in the foods we love and still stay on track with our health goals. I'm excited to share a recipe that seamlessly blends both indulgence and nutrition: my Bright Lemon Protein Muffins. These muffins are a delightful combination of tangy lemon, crunchy poppy seeds, nutrient dense chia seeds, and packed with protein to keep you feeling full and energized. They are a delicious way to enjoy a treat that won't compromise your health goals!

Bright Lemon Protein Muffins

Bursting with vibrant lemon, these muffins are complemented by the delicious crunch of poppy seeds and chia seeds. Perfect as a post-workout snack, paired with a protein shake, or simply enjoyed on their own, they're a nutritious treat that's refreshing and satisfying.

Yield: 9 Standard Muffins

Ingredients:

  • 1 cup oat flour

  • 1/4 cup brown rice flour

  • 1/4 cup tapioca flour

  • 1/2 cup vegan vanilla protein powder

  • 1 tbsp poppy seeds

  • 1 tbsp chia seeds

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 1 large egg 

  • 2 tbsp coconut oil, melted and cooled

  • 1/4 cup maple syrup

  • 1/2 cup unsweetened almond milk

  • 1/4 cup fresh squeezed lemon juice

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla extract

  • Fine zest of 1 lemon

Instructions:

  1. Preheat your oven to 350°F. Line a muffin tin with paper liners or lightly grease with cooking spray. Set aside.

  2. In a large bowl, combine the oat flour, brown rice flour, tapioca flour, protein powder, poppy seeds, chia seeds, baking powder, baking soda, and salt. Mix well.

  3. In a separate smaller bowl, whisk together the egg, melted coconut oil, maple syrup, almond milk, lemon juice, lemon zest, apple cider vinegar and vanilla extract, until smooth.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined and no dry bits are left. Be careful not to over mix too much, as this can make the muffins dense.

  5. Divide the batter evenly among the muffin tin cups, filling each about 3/4 full.

  6. Bake in the preheated oven for about 22-25 minutes, or until puffed up and golden. 

  7. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

  8. Enjoy!

Notes:

Store the muffins in an airtight container at room temperature for no more than 2 days, refrigerate for up to 5 days, or freeze for up to 3 months for longer storage.

For 1 Muffin: 1 Carb, 1/2 Fat, 1/3 Protein

Approximately: 175 Calories, 23g Carbs, 6.2g fat, 8.2g Protein
