As the breeze grows warmer and the days longer, spring invites us to rejuvenate our meals with fresh, vibrant ingredients. With farmers markets now open, and seasonal produce becoming more abundant, it's a wonderful opportunity to incorporate fresh veggies and herbs into our meals.

This week, I'm thrilled to share a refreshing recipe that will elevate any meal:  Delicious Vegan Spring Rolls with Peanut Sauce.  Packed with nutrient dense veggies, tofu, and fresh basil, these fun rolls are a healthy take on the classic.  No egg here, and no gluten or dairy - just pure flavor and vibrant appeal that's perfect for any gathering, or a light nourishing meal.

These spring rolls are a festive and colorful addition to any table, and a wholesome choice that aligns beautifully with a balanced lifestyle.

My husband always fills his too full, and inevitably, we end up with a few bursting rolls that look more like abstract art than dinner. It’s a great way to share some smiles and enjoy a hands on meal together.

  • Easily Customizable: Who says you have to stick to the script? Spice up these spring rolls with your favorites. Not a fan of tofu? No sweat! Swap it out for your favorite protein of choice. Not vegan? Add some cooked shrimp, or grilled chicken. Want more color in your meal? Add any veggies you've got in the fridge. The possibilities are endless, so have fun making each roll your own.

  • Healthy and Nutritious: These spring rolls are a complete package, offering all the necessary macros for a balanced meal. They're rich in vitamins and minerals from fresh veggies, packed with protein from the tofu, include heart-healthy fats from the creamy peanut sauce, and provide smart carbs from the rice paper wrappers, ensuring that they're as nutritious as they are delicious.

  • Allergic or Intolerant to peanuts? No worries! Substitute the peanut butter with almond butter in the sauce. The taste will be subtly different yet equally delightful.

Delicious Vegan Spring Rolls with Peanut Sauce

Yield: Approximately 10 rolls

Ingredients:

For the Tofu and Marinade: 

  • 1 block (14 oz) firm tofu, pressed and cut into strips

  • 2 tablespoons low sodium tamari (gluten-free soy sauce)

  • 2 teaspoons gochujang paste

  • 1 tablespoon maple syrup

  • 1 teaspoon sesame oil

For the Spring Rolls:

  • 1 carrot, julienned

  • 1 cucumber, sliced in half moons

  • 1 bell pepper, thinly sliced

  • A small bunch of fresh basil leaves

  • 1/2 large avocado, sliced

  • 3 cups lettuce leaves (Spring mix, butter lettuce and baby lettuces all work well)

  • Rice paper wrappers (These can be found in the Asian food section of most grocery stores)

For the Peanut Sauce:

  • 1/3 cup natural peanut butter (unsweetened)

  • 2 tablespoons low sodium tamari (gluten-free soy sauce)

  • 1 tablespoon fresh squeezed lime juice

  • 1 tablespoon unsweetened rice vinegar

  • 1 tablespoon maple syrup

  • 2 teaspoons grated fresh ginger

  • 1 clove garlic, minced

  • Red chili flakes, to taste

  • 1/4 cup or more of water, as needed to thin the sauce

Instructions:

1. Prepare the Tofu:

Press your tofu and pat dry. In a small bowl, mix the tamari, gochujang paste, maple syrup, and sesame oil to create a marinade. Place the tofu strips in a bowl and pour the sauce over the tofu strips. Gently stir, and let marinate while preparing the peanut sauce. 

2. Prepare the Peanut Sauce:

In a small bowl, combine peanut butter, tamari, lime juice, rice vinegar, maple syrup, ginger, garlic, and red chili flakes. Whisk until smooth. Add in the water, a little at a time, until the desired sauce consistency is reached. Set aside.

3. Cook the Tofu:

Heat a non-stick pan over medium heat. Add the marinated tofu in a single layer. Cook until browned, and then gently flip and cook the other side, until crispy, about 12-15 minutes. Be patient, as this can take awhile. If they seem to be browning too fast, turn the heat down to medium low. Alternatively you can cook your tofu in an air fryer.

3. Assemble the Spring Rolls:

Prepare a large shallow pan or bowl of warm water. Dip each rice paper wrapper in the water for about 15-20 seconds until it becomes pliable but not overly soft.

Lay the wrapper flat on a clean surface. Place a few strips of tofu in the center, then add julienned carrot, cucumber, bell pepper, a few small basil leaves, and slices of avocado. Top with some lettuce, then fold the bottom half of the rice paper wrapper over the filling, fold in the sides, and roll tightly. Repeat with the remaining ingredients.

4. Enjoy!

Place on a platter and serve with the spicy peanut sauce for dipping.
