Today, I'm excited to share a new recipe that puts a delicious twist on your standard burrito bowl: Spaghetti Squash Burrito Bowls! These vibrant bowls are not only visually appealing, but packed with nutritious ingredients, making them a perfect choice for a healthy meal. Whether you're looking for a hearty lunch or a light dinner, these bowls are sure to satisfy.
Spaghetti squash is making an appearance in the market, and I couldn't be more excited! Some of you may think this is an intimidating vegetable. I, too, used to not really know what to do with it. It would sit on my counter for weeks and I would never feel inspired to cook it. Now, though, it's such a fun vehicle! Think of it as a vessel to fill with other goodies - like this Epic Burrito Bowl! Packed with hearty beans, crisp slaw and creamy guacamole, this spaghetti squash does not disappoint.
By using pre-made guacamole and canned beans, this recipe comes together in no time, perfect for busy weeknights. Let's dive into this healthy, delicious meal!

Spaghetti Squash Burrito Bowls

Yield: 2 servings
Ingredients:
For the Spaghetti Squash:
1 medium spaghetti squash
1 tablespoon olive oil
Salt and pepper to taste
For the Salad:
1/4 small green cabbage, thinly sliced
1 red bell pepper, thinly sliced
1/4 cup chopped cilantro
Juice of 1/4 lime
Sea salt to taste
For the Beans:
1 can (15 oz) black beans or pinto beans, drained and rinsed, or 1 1/2 cups homemade beans
1 teaspoon ground cumin
1/2 teaspoon red chili flakes
Salt to taste
For the Bowls:
1/2 cup pre-made guacamole (store-bought or homemade)
Instructions:
Prepare the Spaghetti Squash:
Preheat your oven to 375°F (200°C).
Carefully cut the spaghetti squash in half lengthwise, and scoop out and discard the seeds.
Drizzle the cut sides with olive oil and season with salt and pepper.
Place the squash halves cut side down on a baking sheet lined with parchment paper.
Roast in the preheated oven for about 35-40 minutes, or until the flesh feels tender and easily shredded with a fork.
Remove from the oven and let cool until handleable. Once cooked and cooled, use a fork to scrape the flesh into spaghetti-like strands, and leave in their shells. Set aside.
Prepare the Salad:
In a medium bowl, combine the thinly sliced cabbage, red bell pepper, and chopped cilantro.
Squeeze the lime juice over the salad and season with sea salt to taste.
Toss everything together until well mixed.
Prepare the Beans:
In a small saucepan, heat the drained and rinsed beans over medium heat. If really dry, add 1-2 tbsp of water, or veggie broth.
Add the ground cumin, red chili flakes, and salt to taste. Stir to combine and heat through.
Assemble the Burrito Bowls:
Keep the spaghetti squash strands in their shells, and gently press to one side.
Divide the seasoned beans between the two shells, and top with the prepared salad.
Add a generous dollop of guacamole on top of each bowl.
Serve and Enjoy!
