As the days grow just a tiny bit longer, and the anticipation of spring is just around the corner, brighter days feel within reach. I'm envisioning tulips and daffodils, birds singing and many days filled with sunshine ahead. 

Today, I'm excited to share a splash of culinary sunshine with you to lift the spirits and brighten up these gray days: Gluten-Free Carrot Protein Muffins! These little delights are not only visually appealing with their bright color, but they are also packed with nutrients that can boost your mood and nourish your body. Yay!

These Gluten-Free Carrot Protein Muffins are a nutritious and delicious snack that can be enjoyed for breakfast, as a post-workout snack, or any time of day.  They are naturally sweetened, fluffy, high in protein and sneaky with veggies! 

Pair with a protein shake and sautéed greens for a complete meal, or simply enjoy with tea. No matter how you decide to enjoy them, they are sure to brighten your day with their uplifting flavor and wholesome ingredients!

Carrots are rich in beta-carotene, which is essential for good vision, immune function, and skin health. They are a good source of antioxidants and fiber, which support digestive health and reduce the risk of chronic diseases.

To support your active lifestyle and nutrition goals, we've enriched these muffins with plant-based protein powder. This addition boosts the protein content of each muffin, aiding in muscle repair and growth, and contributes to satiety. Winning!

Naturally Sweetened: 

By using bananas as a natural sweetener, these muffins minimize the need for added sugars. The riper the banana you use, the sweeter the muffin. Bananas also contribute potassium, an essential mineral for heart health and blood pressure regulation.

Flexible:

If you prefer a sweeter muffin, feel free to add in golden raisins, or chocolate chips when stirring in the carrots.  No carrots? No problem! Replace with shredded zucchini instead. Don't like almonds? No worries. Simply replace with your favorite nuts or seeds. This recipe also works well with regular, all purpose flour if you are not gluten-free.


Gluten-Free Carrot Protein Muffins

Naturally sweetened, fluffy, high in protein and sneaky with veggies, these sunny muffins do not disappoint!

Yield: 12 standard muffins

Ingredients:

  • 1 cup 1:1 all purpose gluten free flour 

  • ⅓ cup plant based vanilla protein powder

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ⅛ tsp sea salt

  • 2  bananas (the riper, the sweeter your muffin)

  • 2 eggs

  • ½ cup unsweetened almond milk

  • ⅓ cup almond butter

  • 1 tsp apple cider vinegar

  • 1 cup peeled grated carrot

  • ⅓ cup sliced raw almonds

Optional add ins: dark chocolate chips, golden raisins or walnuts.

Instructions:

  1. Preheat the oven to 350° F and line a standard-sized muffin tin with liners, or use a silicone muffin tray.

  2. In a large bowl, mix together all the dry ingredients: gluten free flour, protein powder, cinnamon, baking powder, baking soda and sea salt.

  3. In a separate smaller mixing bowl, mash the bananas.  Crack the eggs into the mashed bananas and whisk until well combined. Add in the almond milk and stir again. Add the almond butter and apple cider vinegar and whisk until no lumps appear and the mixture is smooth.

  4. Pour the wet ingredients into the dry and gently mix until the flour absorbs all the liquid. Fold in the carrots, and mix until well incorporated. If using add ins, stir those in until well combined.

  5. Spoon into the prepared muffin tins. Top with the sliced almonds, or nuts/seeds of choice.

  6. Bake at 350° F for 25-30 minutes until golden brown.  Test for doneness by inserting a toothpick into the center of a muffin and making sure it comes out clean.

  7. Remove from the oven and let cool until handleable, then lift out and cool completely on a rack.

  8. Enjoy!
