Potato Slab and Smoked Salmon Breakfast

“Potato toast” is a great, healthy alternative to bread. Topped with smoked salmon, avocado, sliced cucumbers, fresh dill, and green onion, you get all the macros needed to have an energy fueled day!
Potato Slab and Smoked Salmon Breakfast

Ingredients:
2 Large russet potatoes, unpeeled, skin on and scrubbed clean
1 Tbsp olive oil, divided
Sea salt
½ English cucumber
1 small, ripe avocado
1 Tbsp fresh dill
2 green onions
8 oz smoked wild salmon
Instructions:
Preheat the oven to 425 degrees. Line a sheet pan with parchment paper or a silpat.
Slice the unpeeled russet potato into even slices, approximately 1/4 to 1/2-inch thick, using a sharp knife or mandolin. Place the potato slices on the prepared baking sheet in a single layer. You may need to use two baking sheets depending on the size of your potatoes. Drizzle with half of the olive oil. Use a pastry brush to evenly distribute the oil. Sprinkle with sea salt. Flip the potato slices over and repeat the process on the other side.
Bake in the preheated oven for approximately 30 minutes, flipping over at the 18 minute mark. Be sure to bake until the potatoes have become soft and are slightly golden. Remove from the oven and let cool until easily handled.
Meanwhile, prepare the veggies. Slice the cucumber into thin rounds. Slice the avocado. Separate the dill from its stem and finely chop. Slice the green onion.
Divide the salmon into 8 sections.
Divide the cooked potato slabs onto 4 plates. Top each potato slab with salmon, avocado, cucumber, green onion and dill, and serve immediately.
