I’m finally back after moving my website to a new host. It turned out to be a bigger behind the scenes project than I expected, but I’m so happy to be here again sharing something fresh with you!
It’s finally starting to feel like spring! After what felt like an extra long winter, the sun is sticking around a little longer each day, the air is warming up, and tiny flowers are popping up everywhere. It’s amazing what a few blooming daffodils and a walk without a heavy jacket can do for the spirit!
To celebrate the change of seasons, I’ve been loving these Raspberry Bliss Bowls! They are a super simple and satisfying blend of frozen raspberries, banana, and vanilla protein, topped with toasted coconut, crunchy pistachios, and my favorite gluten free granola. I’ve been making them on repeat lately, especially after workouts!
Cool and creamy with just the right mix of sweet and tart, they are full of vibrant flavor and give the best kind of energy. The toppings add the perfect crunch and they keep me full without feeling heavy. They are such a good post workout option or anytime you want a refreshing berry powered boost!

Raspberry Bliss bowls
A bright, flavor packed smoothie bowl made with tart raspberries, creamy banana, and vanilla protein, then topped with crunchy granola, toasted coconut, and pistachios. Cool, refreshing, and perfect any time you want something light, energizing and satisfying!

Yield: 2 servings
Ingredients:
For the Base:
1 to 1½ cups unsweetened almond milk (adjust for desired thickness)
4 scoops plant based vanilla protein powder (about 60 grams total protein)
1 cup frozen raspberries
1 large frozen banana, sliced
For the Toppings:
Toasted coconut flakes
Chopped pistachios
Gluten free granola
Optional: fresh berries
Instructions:
Make the base: In a high speed blender, pour in the almond milk first. Add the protein powder, then frozen raspberries and sliced banana. Blend until thick and creamy, using the tamper to help move the mixture as needed. Scrape down the sides to incorporate any powder that sticks, and blend until smooth. Add more almond milk a little at a time to reach your desired consistency.
Assemble the bowls: Spoon the smoothie into two bowls and smooth the tops. Add your the toasted coconut, pistachios and granola, and top with more fresh berries if desired.
